Black Bean Burger

  • 2 cups black beans, drained and mashed with a fork

  • 1 cup breadcrumbs

  • 1 bunch green onion white part only chopped

  • 1 cup pimento diced, or roasted red pepper

  • 1 tablespoon fresh garlic minced 

  • 1 egg 

  • 1 table spoon of cornmeal, or flour

  • Salt and freshly ground black pepper

Mix with a fork, potato masher, or a mixer. Divide the mixture into patties or meat ball shapes. Cook on a grill, iron skillet, or baking sheet. I enjoy cooking them in a pan with some red sauce and served with vegetable noodles.
