Black Bean Burger

2 cups black beans, drained and mashed with a fork

1 cup breadcrumbs

1 bunch green onion white part only chopped

1 cup pimento diced, or roasted red pepper

1 tablespoon fresh garlic minced

1 egg

1 table spoon of cornmeal, or flour

Salt and freshly ground black pepper
Mix with a fork, potato masher, or a mixer. Divide the mixture into patties or meat ball shapes. Cook on a grill, iron skillet, or baking sheet. I enjoy cooking them in a pan with some red sauce and served with vegetable noodles.
