Boule Loaf

1 packet quick acting yeast

1 teaspoon honey

1/2 tablespoon salt

2 cups warm water

5 cups all-purpose flour

3 tablespoons olive oil
Mix the water honey and yeast into a glass and stir to dissolve the honey. Let that sit for 10-15 minutes until a foam covers the top. While waiting sift you flour, and salt together in a bowl. Make a volcano (mound of flour with a hole in the middle) and pour the water mix, and oil into the volcano. Mix with a fork until it is all incorporated.
Then mix it by hand until it becomes dough you can work with. Knead the dough until it becomes a smooth ball of dough. Wrap this in a greased and floured bowl, and leave in a warm place to double in size. This can take 30-60 minutes. Punch the dough down, and let it rise one more time for 30 minutes.
You will want a floured surface now. Cut the dough into two pieces and shape into loafs. Cover the loafs in an egg wash or olive oil. Then bake them at 450 for 30-45 minutes on a preheated baking sheet or pizza stone.
