2 pounds of sweet potatoes

1 small yellow onion

1 bunch of fresh spinach

2 tablespoons of bacon fat

1 table spoon of butter

2 teaspoons of pepper

2 teaspoons of salt

1 pinch of cayenne
Sweet Potato Hash
Slice the potatoes into thin half circles, and boil them for 10-15 minutes. In a hot pan cook the onions in bacon fat. Add the salt pepper and cayenne. When the onions start to form water drops add the cooked potatoes, and butter. When the potatoes are soft add the spinach, and cook until it turns dark green.
