Quick Pickled Vegetables

  • 1 cup rice vinegar

  • 5 oz honey

  • 1 oz sake *optional

  •  1 teaspoon of coriander seed

  • 1 teaspoon of mustard seed

  • 1 teaspoon of garlic minced

  • 1 teaspoon of salt

  • 1 teaspoon of pepper

  • 1/4 teaspoon of red pepper

  • 1 bay leaf

  • 3 leafs of basil

  • 3 sprigs of parsley

  • carrots, cucumbers, celery, onions, cauliflower, and green beans work well

With carrots and green beans you will need to boil them for 5-8 minutes before you follow the other steps. Prepare an ice bath by placing an empty bowl over a bowl filled with ice water. Bring the first ingredients to a boil and add the vegetable. Then place the mixture into the bowl over the ice bath. Once cooled the vegetable should be crisp and tasty.
